Choco Chip Muffin

Chocolate...who does not like it?? And if its the molten one I just love it. Choco cip muffins are one of the hot favorites among kids. And its my favorite too......so I made it at home this time. I have eaten the one which are dark chocolate color but I always prefer to have white muffins with choco chips peeping out here and there. So I did not use cocoa powder in this recipe to make it brown in color.

Ingredients :

1. All purpose flour (Maida)- 1 and 1/2 cup
2. Sugar- 3/4 cup
3. Cinnamon powder- 2/3 tsp
4. Salt- 1/2 tsp
5. Baking soda- 1/2 tsp
6. Baking powder- 1 tsp
7. Chocolate chip- 2/3 cup
8. Egg- 2
9. Milk- 1/2 cup
10. Canola oil- 1/2 cup
11. Vanilla essence- 1 tsp

Procedure :

In a pan mix all the dry ingredients and the chocolate chips. Keep it aside. In a separate bowl whisk the eggs with other liquid ingredients. After that add the dry mixture into the liquid mix slowly. Mix with a spoon lightly. Do not over mix it. Pre heat the oven at 350 degree F. Put the muffin papers in the pan and fill them up to 2/3 rd. Place the pan in the oven and bake for 20 minutes. Check it with a sharp knife if its done. Take it out and place on rack.

Strawberry Roulade

This is the first time I tried my hands on roulade recipes. And what else can I make apart from the famous Strawberry Roulade!! The mild sweetness of this roulade impressed us a lot as we both are not that big fan of sweets. If you prefer extra sweetness, you can change the sugar quantity according to your taste.

Ingredients :

1. Egg- 6
2. All purpose flour- 100 gm
3. Confectioner sugar- 200 gm
4. Whipped cream- 200 gm
5. Strawberry- 1 cup

Procedure :

In a bowl take the egg whites. Now while separating egg whites from the yolk be extra careful. If you mix up the yolk with the egg white , the beaten egg white will never be stiff enough. Beat the egg whites until they turn fluffy and stiff. Keep it aside. In a separate bowl take the egg yolks and mix well. Add the sugar and beat until the color turns pale and the mixture becomes fluffy. Fold in the flour. Do not over mix it. Pre heat the oven at 350 F. Prepare the baking pan. You can spray some cooking oil and dust a little flour in the pan or you can use a baking sheet. Fold in the egg white mixture into the egg yolk mixture. Mix well and pour the batter in the baking pan and bake for 15 to 18 minutes until the surface turns light brown. Test with a toothpick if its done or not. Take out and roll it softly. Do not put much pressure. I rolled it while it was warm so that it does not break. Keep it rolled for 5 to 7 minutes.

Meanwhile, beat the cream and add some more sugar if needed ( I added 3 tbs sugar). Take half of the strawberries and puree them. Cut the remaining strawberries into pieces. Now open the roll. Spread the strawberry puree and then the cream and on top place the strawberry pieces. Roll it again and hold it with the help of toothpick. Place it in refrigerator for 2 hours and then cut the roulade into pieces and serve.

Jalebi

Do you remember the old advertisement on the television.....how an angry kid left his house and went to the railway station to leave the place as he thought none loves him and his grandpa took him back to the house showing him the temptation of jalebi.....I still giggle whenever the I remember the way the boy said "Jalebi!!!"...
As a kid I never liked sweets much.....but every thing changed when I came here in Bangalore...Now I always look for jalebi with hot spicy samosas...otherwise I almost faint while eating the spicy samosas :P...So I tried my hands this time on jalebis and here I come with the recipe :

Ingredients :

1.Wheat flour- 1 cup
2. Urad daal flour- 1/4 cup
3. Sodium bicarbonate- 1 tsp
4. Sesame oil- 2 tbs
5. Food color- 1/2 tsp
6. Oil for deep frying
7. Sugar- 300g
8. Water- 240 ml
9. Saffron- few strands

Procedure :

Mix wheat flour , urad daal flour , sodium bicarbonate , sesame oil  and food color. Mix them well and add water slowly (around half a cup). Keep stirring the batter while adding water. Check the consistency frequently. The batter should not be too watery or too thick , it should be semi thick. Now keep it in a jalebi maker.
In a shallow pan heat oil for deep frying the jalebis. Meanwhile prepare the sugar syrup for it. In a pan add water and sugar and bring it to boil , then reduce the heat and simmer it for another 5 minutes. If needed , sieve it once to remove any kind of impurities. Add saffron strands to add flavor to the syrup.
Now if the oil for deep frying is ready , pour the batter with the help of the jalebi maker in a circular motion , starting from the center and finally sealing the end in the outer layer. Fry the jalebis on medium heat until they turn crispy and dark in color. Take them out when they are done and immerse them in the warm sugar syrup for 30 seconds. Serve them hot or cold.

Only 9 days left for the event What's on your kebab platter. Hurry up or else you will not be able to participate for the giveaway.
I am sending this recipe to Diwali special Sweets & Savories.

Til Ke Laddoo

Though I am a big fan of til ke laddoo , I never tried to make them at home before. I don't like the jaggery version of the laddoo's as it feels more sticky and a little extra sweet to me. Hence , I have made the laddoo with sugar only.

Ingredients :

1. Sesame seeds (til)- 1 cup
2. Powdered sugar- 1 cup
3. Milk powder- 1 cup
4. Milk- 3 tbs

Procedure :

Now you must be wandering , why have not I used mawa. The simple reason is that I had a packet of dry milk powder in my store from a long time , so I wanted to make use of it. Instead of using store bought mawa , I made my own. In a bowl take the milk powder and add the milk to it. Now knead this properly and soon you will get a hard dough just like mawa. Wrap it in a cloth tightly and keep it in refrigerator for 2 hours and your mawa is ready.
Now grate the mawa and keep it aside. In a kadhayi dry roast the sesame seeds until they turn a little brown and start popping out. Let it get cooled and grind it. Next dry roast the mawa until it turns a little brown , keep stirring it or else it will stick to the bottom of the pan.

Now mix the sesame seeds , sugar and roasted mawa. The mixture is ready for the laddoo. Grease your palm with a little ghee and make small balls from the mixture while its still warm.
Since I have used milk in it , I had to keep the laddoo in refrigerator.

Sweet Jackfruit Nuggets

As the name suggests , this nugget is a crunchy and deep fried one. But the twist is  that its a sweet preparation!! A packet of jack fruit was lying in my refrigerator from a long time. Finally I thought of eating them yesterday and started de seeding and chopping them. Suddenly an idea came to my mind...why not make some sweet from this juicy fruit.......and then I came up with these Sweet Jackfruit Nuggets.

Ingredients :

1. Jackfruit- 1 cup
2. Milkmaid- 1 tsp
3. Salt a pinch
4. Coconut milk- 2 large tbs
5. All purpose flour (maida)- 3 large tbs
6. Arrowroot- 2 tsp
7. Cornflour- 3 tbs
8. Bread crumb- 1 cup
9. Oil to deep fry

Procedure :

First chop the jackfruit into small cubes. In a large bowl add chopped jackfruit , maida , arrowroot , coconut milk , salt and milkmaid. Mix them well. The milkmaid will form a sticky mixture with maida and arrowroot. Now make small balls from this mixture and keep it aside.

Heat oil in a deep bottom pan. Mix very little water to the cornflour to make a thick batter. Dip the jackfruit balls in the cornflour mixture and then roll them on the bread crumbs. Deep fry them on medium heat until they turn golden brown. Keep them on a paper napkin to remove excess oil. Serve it hot.

Tips: My husband tried them with chilly sauce and they tasted really awesome.

Aamchur - Posto'r Chutney

This is the simplest of all chutneys that I have eaten so far. Its a perfect sweet and sour treat. I like this chutney with hot rice and plain daal.

1. Posto (khus khus / poppy seed)- 5 large tbs
2. Aamchur (dry)- 8 to 10
3. Sugar- 5 tsp
4. Oil- 1 tsp
5. Jeera (cumin seeds)- 1/4 tsp
6. Turmeric powder- 1/4 tsp
7. Salt to taste

Procedure :

Soak the posto in water for half an hour and then drain the water from it. Grind the posto in mixer with little quantity of water. Now heat oil in a pan and add jeera to it. When the jeera start spluttering , add the aamchurs. Now add the posto , turmeric , salt and mix well. Add the sugar and 1/2 cup of water. Cover the pan and let it cook for 4 to 5 minutes. Check the sweetness level of the chutney and adjust it if needed. Remove it from the flame and serve it with hot rice.
Note : the aamchurs are already salty , hence , use a little amount of salt for this.

Aam Pora shorbot Or Aam Panna

We call aam panna as aam pora shorbot in Bengali. During the summers it used to be my favorite drink. Aam panna is known for its heat resisting quality. It is a drink made from green mangoes. The light green color of the panna makes it look more attractive.
Though I have given below the measurements to make the panna , I will recommend you to go by your taste bud and make your own measurements. The taste will vary due to the sourness of the mangoes used.

Ingredients :

1. Raw mango- 2
2. Sugar- 4 tbs
3. Jaljeera- 2 tsp
4. Salt to taste
5. Aamchur powder- 1 tbs
6. Tulsi leaf- 6 to 7
7. Roasted cumin (jeera) powder- 1 tsp

Procedure :

Peel the mangoes and cut them into small chunks. In a pan add little water and the mango pieces and cover the pan and boil it. When the mangoes will start getting soft , mash them with the help of spoon. Cook it until all the mangoes turn soft. Now remove it from the flame and let it cool down to room temperature.
After cooling , blend the mango mixture and tulsi leaves in blender until it turns smooth and pulpy. Take the blended mixture in a large bowl and add salt , sugar , all the powder (except jeera powder) and 2 cups water. Mix it well. Add sugar or salt according to your taste. Pour the aam panna in a glass and refrigerate it for an hour. While serving , sprinkle a pinch of the roasted jeera powder on top of it.

Note : Some people do not use the pulpy portion of the panna , but I love the tiny pulps floating in my shorbot. So I did not strain the panna.

Home Made Rasgulla

It is a favorite sweet among Bengali people. It is quite easy to make those soft white balls at home.

Ingredients :

1. Milk (500 ml packets)- 3
2. Lemon juice- 2 tbs
3. Sugar to taste
4. Water- 2 glass
5. All purpose flour- 1/2 cup

Procedure :

First boil milk in a deep bottom kadhayi and add the lemon juice to it. Stir the milk occasionally until chenna is produced and collected at the top. Now drain the water and keep the chenna under running water for 10 minutes. Squeeze the chenna properly to remove water from it. Next mix flour with chenna and knead them into a smooth dough. Now make medium size balls from the dough and keep them covered with a wet cloth. Heat the water and sugar in a pressure cooker and when the water starts boiling , add the balls slowly. Cover the lid and cook it over low flame until the first whistle blows. Cool the cooker and remove the lid. Take the rasgullas out in a bowl.
