Kulfi is a milk based traditional Indian dessert. One even says that it is an Indian form of ice cream. It comes in various flavors....but my all time favorite is none other than the Mango Kulfi :)........I still remember when I was a kid , how during the summer vacation I used to stay attentive the whole afternoon , just to hear the sound "Kulfi chai...Kulfi".......yes that time we did not have a refridgerator at home, so I had to depend on the famous Kulfiwala of our neighborhood. While making the kulfis at home this time , all the sweet memories of my childhood were going through my mind :)
Ingredients :
1. Mango (ripe)- 1
2. Cream- 1/4 cup
3. Gelatin- 1 large tbs
4. Honey- 1/4 cup
5. Lemon juice- 1 tsp
Procedure :
Peel the skin of the mango and cut it into small pieces. Blend the pieces in a hand blender. Use 1 cup of that puree. Now whip the cream in a bowl with whisker until it becomes fluffy. Add gelatin and 3 large tbs water in a pan and heat it over low flame. Stir the mixture with a spoon till the gelatin dissolves completely into water. Remove it from the heat. Now add the mango puree , gelatin , honey and lemon juice to the cream bowl and whip it together. Freeze the mixture for an hour or until it turns semi hard. Take it out and whip the mixture again for 10 minutes. Freeze it overnight and serve the Mango kulfi the next day.
