Sambar Recipe

Sambar is a vegetable stew made with tamarind and is a very famous recipe in South India. It is usually served with steamed rice or vada , idli etc. 

 
Ingredients :

1. Arhar daal- 3/4 cup
2. Lauki (small pieces)- 1 cup
3. Brinjal (small)- 2
4. Tamarind pulp- 1 tbs
5.Salt to taste
6. Hing- 1/4 tsp
7. Sambar powder- 2 1/2  large tsp
8. Onion (finely chopped)- 1 small
9. Mustard seed- 1/2 tsp
10. Curry leaves- 10
11. Jaggery- 1 tsp
12. Oil

Procedure :


Soak the daal in water for an hour. Now in a deep bottom kadhayi add the daal and 2 cups of water and boil it. Cover the kadhayi and mash the daal after certain intervals. Add some more water if needed. When the daal is done and almost mashed properly , add salt and the chopped vegetables to it. Cover and cook till the vegetables are done. Now in another pan heat oil and add mustard , curry leaves , sambar powder , onion. Fry them for 2 to 3 minutes till the onions are done. Now add this fried onion mixture to the daal and add jaggery , tamarind. Mix well and bring the whole thing to boil. After 3 to 4 minutes turn off the heat. Serve it hot with idli.

  10. Sambar with Lauki has become a regular fare in our house now as we don't get ash gourd and pumpkin so easily here in Hyderabad..we have to buy it as a whole...Your Sambar looks very good
